Mix Seasoned rice vinegar and sugar together.
Rinse rice in fine mesh strainer until water runs clear.Pour rinsed rice into the Instant Pot. Fill with water, and add salt, stir lightly.Press the rice button and set for 10 minutes. Quick release. Stir in seasoned rice vinegar/sugar mixture while rice is hot. Allow rice to get cool completely.
While rice is cooling, make your spicy mayo. Cover and let chill until ready to use.
When rice is completely cooled, place a scoop in your bowl. Place your favorite toppings and dig in!
