Spinach + Artichoke Pizza Pot Pie

Ingredients

Dough

  • 1 1/4 cup Warm Water
  • 2 1/4 tsp Dry Active Yeast
  • 1 tsp Sugar
  • 2 tbsp Olive Oil
  • 3 - 4 cup All-Purpose Flour ( I like King Arthur brand)

Filling

  • 1 Bag Baby Spinach, Halved
  • 1 Can Artichoke Hearts, Chopped
  • 1/4 cup Butter
  • 1/4 cup Flour
  • 3/4 cup Milk
  • 3 Garlic Cloves, Minced
  • Salt and Pepper to taste.
  • Mozzarella, sliced
  • Provolone, sliced

Instructions

Dough

  • Add warm water, sugar and yeast to large bowl and allow to rest for 5 minutes or until mixture is foamy. Add oil to yeast mixture and stir. Slowly add flour until dough forms into a smooth ball. Knead dough for 5 minutes, place in oiled bowl cover and set aside to rise about 1 hour.

Filling

  • In small skillet add oil and half the bag of spinach to wilt. Set aside. In a sauce pan add butter, melt and add flour to make your roux. Whisk for about 2 minutes to cook off the flour taste. Add milk and stir until smooth and thick. Stir in wilted spinach and garlic.

Assembly

  • Preheat oven (I use the instant omni) to 400. Gather 2 large or 4 small ramekins, grease them and layer mozzarella, and provolone. Add, artichoke hearts, remaining bag of spinach and top with the béchamel sauce. Roll out dough and divide between ramekins. Lay the dough over the top of the ramekins and secure around the bowls. Bake for 10-15 minutes or until dough is golden brown. Remove for oven. Carefully place a plate over the filled ramekins and flip. You will need to carefully pull the ramekin up away from the dough.
