Garlic Butter Smashed Sweet Potatoes
Delicious sweet potatoes, par cooked in the instant pot, sliced, smashed and drizzled with herby garlic butter and broiled to beautiful golden sweet potato rings.
- 4 Medium Sweet Potatoes washed, pierced multiple times
- 1 Cup Water
- 4 Tbsp Butter melted
- 3 Garlic Cloves minced
- 1 Tbsp Fresh Parsley minced
- 1 Tbsp Fresh Thyme minced
- Parmesan Cheese finely grated
- 1 Tsp Salt
- 1/2 Tsp Fresh Cracked Pepper
Wash sweet potatoes, scrub well to make sure you remove all the dirt
Pierce sweet potatoes multiple times.
Place steamer basket into the instant pot, along with a cup of water.
Place in sweet potatoes and set instant pot to manual for 12 minutes if you have small/medium sweet potatoes. Quick release.
When sweet potatoes are done, slice into 1/2” to an inch thick slices.
Place sweet potato slices onto lightly greased baking sheet.
Lightly smash the sweet potatoes. Drizzle with garlic butter.
Place in Omni, and select broiler for 10-15 minutes or until nicely browned. Add Parmesan and broil a minute longer to melt the cheese.
